Anthocyanin-decolorizing systems have previously been reported in leaves2–4 and these, in common with the system found in cherries, apparently involve the action of an oxidizing enzyme.

M. Mene, a French chemist, has just discovered that hydrate of alumina, prepared by decomposing alum with carbonate of soda, is a perfect substitute for animal charcoal in the decolorizing of liquids.
